    Prepare the Noodles

    Soak the wide rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

    In a large wok or skillet, heat vegetable oil over medium-high heat. Add minced garlic and shallots, and sauté for 1-2 minutes until fragrant.
