Make the Crab Cakes
In a large mixing bowl, combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onion, beaten egg, bread crumbs, salt, and black pepper. Mix gently until just combined.

Form the Patties
Divide the mixture into 4 equal portions and shape each into a patty, about 1 inch thick. Place on a plate and refrigerate for at least 30 minutes to firm up.

Cook the Crab Cakes
Heat olive oil in a large skillet over medium heat. Add the crab cakes and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and set aside.

Prepare the Platter
On a large serving platter, arrange saltine crackers. Place two crab cakes on top of the crackers. Serve with fries and coleslaw on the side.
