Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick.

Heat the Oil
In a deep pot or fryer, heat the oil to 350°F (175°C).

Coat and Fry the Onion Rings
Dip each onion ring into the batter, allowing the excess to drip off. Carefully place the battered rings into the hot oil in batches. Fry until golden brown, about 3-4 minutes per side.

Drain and Serve
Remove the onion rings from the oil and drain on paper towels. Serve hot with chipotle dipping sauce.
