    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes.

    Drain and Season

    Remove the fries from the oil and place them on paper towels to drain. Sprinkle with salt, paprika, garlic powder, and black pepper while they're still hot.

    Serve

    Transfer the fries to a basket and serve hot with your choice of dipping sauces.
