Prepare the Chicken
In a bowl, combine buttermilk, cayenne pepper, paprika, salt, and black pepper. Add the chicken thighs, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight.
Make the Slaw
In a large bowl, combine shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss well to combine and refrigerate for at least 30 minutes.
Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Remove chicken from the buttermilk mixture, allowing excess to drip off. Dredge in all-purpose flour, ensuring an even coating. Fry chicken in batches until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.
Assemble the Sandwiches
Toast the burger buns if desired. Place a piece of fried chicken on each bun, top with slaw, and add cucumber slices. Serve immediately.
