Method

Preparation of Chhena

    Boil the Milk

    In a large pot, bring 1 litre of whole milk to a boil over medium heat, stirring occasionally to prevent it from burning.

    Curdle the Milk

    Once the milk reaches a boil, remove it from heat and add 2 tablespoons of lemon juice. Stir gently until the milk curdles and the whey separates.

    Strain the Chhena

    Line a colander with cheesecloth and pour the curdled milk into it to strain the whey. Rinse the chhena under cold water to remove the lemony flavor. Gather the cheesecloth and squeeze out excess water.

    Knead the Chhena

    Transfer the chhena to a bowl and knead it with your palms for about 5-7 minutes until it becomes smooth and soft.

Preparation of Sugar Syrup

    Combine Ingredients

    In a large pot, combine 4 cups of water, 1 cup of sugar, and 4 cardamom pods.

    Boil the Syrup

    Bring the mixture to a boil over medium heat, stirring occasionally until the sugar dissolves completely.

    Simmer

    Once boiling, reduce heat and let it simmer for about 5 minutes. Remove from heat and set aside.

Preparation of Ras Malai

    Shape the Chhena

    Divide the kneaded chhena into small balls (about 1 inch in diameter) and flatten them slightly.

    Cook in Syrup

    Gently drop the shaped chhena balls into the simmering sugar syrup and cook for about 10-12 minutes. They will expand in size.

    Prepare the Milk Mixture

    In a separate pot, bring 2 cups of whole milk, 1 tablespoon of sugar, 1 teaspoon of cardamom powder, and a pinch of saffron to a boil. Stir continuously to avoid burning.

    Combine

    Once the milk mixture thickens slightly, remove it from heat and add the cooked chhena balls. Let them soak in the milk mixture for at least 30 minutes.

    Garnish

    Serve chilled, garnished with chopped pistachios and almonds.
