    Rinse the Rice

    Thoroughly rinse 1 cup of basmati rice under cold water until the water runs clear to remove excess starch.

    Soak the Rice

    Soak the rinsed rice in water for 30 minutes to allow it to soften.

Cooking

    Sauté the Spices

    In a large pot, heat 2 tablespoons of oil or ghee over medium heat. Add 1 teaspoon of cumin seeds, 1 bay leaf, 2 cardamom pods, and 2 cloves. Sauté for 1-2 minutes until fragrant.

    Add Vegetables

    Add 1 cup of mixed vegetables to the pot and sauté for another 2-3 minutes until they are slightly tender.

    Add the Rice

    Drain the soaked rice and add it to the pot. Stir gently to combine with the vegetables and spices.

    Add Water and Salt

    Pour in 2 cups of water and add 1 teaspoon of salt. Stir to combine all ingredients.

    Cook the Pulao

    Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and has absorbed all the water.

    Fluff and Serve

    Once cooked, remove the pot from heat. Let it sit covered for an additional 5 minutes. Fluff the rice gently with a fork and garnish with fresh coriander leaves, if desired.
