Prepare the Ingredients

Start by cubing the lamb leg into bite-sized pieces. Finely chop the onions, puree the tomatoes, and mince the garlic. Grate the ginger and set all ingredients aside.

Cook the Onions

In a large pot, heat the cooking oil over medium heat. Add the finely chopped onions and sauté until they are golden brown, stirring occasionally.

Add Garlic and Ginger

Once the onions are golden, add the minced garlic and grated ginger to the pot. Cook for 2-3 minutes, stirring frequently to prevent burning.

Add the Spices

Stir in the cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Cook for another 2 minutes until the spices are well combined and fragrant.

Add Lamb

Add the cubed lamb to the pot, stirring well to coat the meat with the spice and onion mixture. Sauté for about 5 minutes until the lamb is browned on all sides.

Add Tomatoes and Water

Pour in the pureed tomatoes and water. Stir well to combine all ingredients and bring to a gentle simmer.

Simmer the Dish

Cover the pot and let the lamb cook for about 1.5 to 2 hours on low heat, stirring occasionally. The lamb should be tender and the sauce thickened.

Finish with Garam Masala

Once the lamb is tender, stir in the garam masala and let it cook for an additional 10 minutes uncovered.

Serve

Remove from heat and serve hot with rice or naan, garnished with fresh cilantro if desired.
