Prepare the Ingredients

Start by gathering all the ingredients. Cut the lamb into cubes, chop the onions, tomatoes, and slit the green chili. Mince the garlic and grate the ginger.

Toast the Spices

In a large pot, heat the vegetable oil over medium heat. Add cumin and coriander seeds and toast them for about 1-2 minutes until fragrant.

Sauté the Vegetables

Add the chopped onions to the pot and sauté until they are translucent, about 5-7 minutes. Then add minced garlic, grated ginger, and green chili. Cook for another 2-3 minutes.

Add the Lamb

Increase the heat to high and add the lamb cubes to the pot. Brown the meat on all sides for about 5-7 minutes.

Add the Spices and Tomatoes

Stir in turmeric, garam masala, chili powder, and salt. Then add the chopped tomatoes and cook until they soften, about 3-4 minutes.

Pour in the coconut milk and water, stirring to combine. Bring the mixture to a boil, then reduce the heat to low.

Cover the pot and let the curry simmer for about 1.5 to 2 hours, or until the lamb is tender. Stir occasionally and add more water if necessary.
