Method

Butter Chicken

    Marinate the Chicken

    In a bowl, combine the chicken thighs, yogurt, ginger-garlic paste, salt, red chili powder, and garam masala. Mix well and marinate for at least 30 minutes.

    Cook the Chicken

    In a pan, heat butter over medium heat. Add the marinated chicken and cook until browned. Add tomato puree and simmer for 15 minutes.

    Finish the Sauce

    Stir in cream and cook for another 5 minutes. Garnish with chopped cilantro before serving.

Muttar Paneer

    Prepare the Base

    Heat oil in a pan, add cumin seeds, and let them sizzle. Add chopped onions and fry until golden brown. Stir in ginger-garlic paste and cook for 1 minute.

    Add Tomatoes and Spices

    Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft.

    Add Paneer and Peas

    Stir in the peas and cubed paneer. Cook for another 5-7 minutes, stirring gently. Garnish with chopped cilantro.

Naan & Garlic Naan

    Make the Dough

    In a bowl, mix the flour, yeast, sugar, and salt. Gradually add warm water and knead until smooth. Cover and let it rise for 1 hour.

    Shape the Naan

    Divide the dough into small balls. Roll each ball into an oval shape. For garlic naan, sprinkle minced garlic on top and roll again.

    Cook the Naan

    Heat a tandoor or skillet. Place the naan on it, cook until bubbles form, then flip and cook the other side. Brush with melted butter before serving.

Rice

    Rinse the Rice

    Rinse the basmati rice under cold water until the water runs clear.

    Cook the Rice

    In a pot, combine rinsed rice, water, and salt. Bring to a boil, then reduce heat and simmer covered for 15 minutes. Fluff with a fork before serving.

Raita

    Mix the Ingredients

    In a bowl, combine yogurt, grated cucumber, cumin powder, salt, and chopped cilantro. Mix well until smooth.

    Chill and Serve

    Let the raita chill in the refrigerator for at least 15 minutes before serving.

Fish Pakora

    Prepare the Batter

    In a mixing bowl, combine besan, rice flour, cumin powder, red chili powder, and salt. Gradually add water to form a thick batter.

    Coat the Fish

    Cut the fish fillets into bite-sized pieces and dip them into the batter to coat evenly.

    Fry the Pakoras

    Heat oil in a deep frying pan. Fry the coated fish pieces until golden brown and crispy. Remove and drain on paper towels.
