Pretzel Bites Preparation

Prepare the Dough

In a large bowl, combine warm water, yeast, and brown sugar. Let it sit for about 5 minutes until frothy. Add flour and salt. Mix until a dough forms.

Knead and Rise

Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Shape the Pretzel Bites

Preheat the oven to 425°F (220°C). Roll the dough into ropes and cut into bite-sized pieces. Boil water in a large pot and add baking soda. Boil the bites for 30 seconds, then remove and place on a baking sheet.

Bake

Brush the pretzel bites with beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown.

Make the Fondue

In a saucepan, combine heavy cream, garlic, and white wine. Heat over medium until simmering. Gradually whisk in provolone cheese until melted and smooth.

Add black pepper and nutmeg to taste, stirring well.
