Prepare the Crust
Preheat the oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form a crust.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and mix until well combined. Then, add the vanilla extract and mix again. Add the eggs one at a time, mixing well after each addition. Finally, stir in the sour cream until fully incorporated.

Bake the Cheesecake
Pour the cheesecake filling over the prepared crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.

Chill the Cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight for the best flavor and texture.

Prepare the Strawberries and Whipped Cream
Slice fresh strawberries and set aside. In a mixing bowl, whip heavy cream with sugar to taste until soft peaks form.

Once the cheesecake is chilled, top it with sliced strawberries and dollops of whipped cream before serving.
