1. Prepare the Lobster Mixture
In a bowl, combine the langostino lobster meat, mayonnaise, chopped celery, green onion, and Old Bay seasoning. Mix well until all ingredients are evenly coated.
2. Assemble the Lobster Melt
Spread softened butter on one side of each slice of Vienna bread. On the unbuttered side of one slice, layer the lobster mixture, followed by a slice of white American cheese. Top with the second slice of Vienna bread, buttered side facing out.
3. Cook the Sandwich
Heat a skillet over medium heat. Place the sandwich in the skillet and cook for about 3-4 minutes on each side, until the bread is golden brown and crispy.
4. Add Cheddar Topping
Once both sides are browned, sprinkle shredded cheddar cheese on top of the sandwich and cover the skillet with a lid. Cook for an additional 2 minutes or until the cheese is melted.
5. Serve
Remove from the skillet, cut in half, and serve warm.
