Prepare the Cookie Dough
In a large bowl, whisk together flour, baking soda, and salt. Set aside.

Cream Butter and Sugars
In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Add Eggs and Vanilla
Beat in the eggs one at a time, then stir in the vanilla extract.

Combine Mixtures
Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chocolate chunks.

Prepare the Cream Cheese Filling
In a separate bowl, mix together cream cheese, powdered sugar, and vanilla extract until smooth.

Assemble the Cookies
Preheat the oven to 350°F (175°C). Scoop a portion of cookie dough, flatten it, and place a dollop of cream cheese filling in the center. Wrap the dough around the filling and form into a ball. Repeat for remaining dough.

Place the filled cookie balls on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.

Once cookies are cool, top each cookie with a scoop of vanilla ice cream, drizzle with chocolate and caramel sauces, and finish with whipped cream.
