    Prepare the Grain Base

    In a medium saucepan, combine brown rice and quinoa with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until grains are tender. Fluff with a fork and set aside.

    Make the Honey Sriracha Glaze

    In a small bowl, mix together honey, sriracha sauce, olive oil, salt, and pepper to create the glaze.

    Cook the Salmon

    Preheat the oven to 400°F (200°C). Place salmon fillets on a baking sheet lined with parchment paper. Brush the honey sriracha glaze generously over each fillet. Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.

    Prepare the Vegetables

    While the salmon is baking, prepare the vegetables. In a large bowl, combine shredded cabbage, spinach, roasted corn, sliced red onion, chopped green onions, diced cucumber, and sliced avocado.

    In each serving bowl, place a scoop of the cooked brown rice and quinoa mixture. Top with the mixed vegetables, a piece of honey sriracha glazed salmon, and a sprinkle of chopped cilantro. Finish with a handful of fried tortilla strips on top.
