    Roast the Prime Rib

    Preheat your oven to 450°F (232°C). Season the prime rib roast with salt, black pepper, and minced garlic. Place the roast on a rack in a roasting pan and drizzle with olive oil. Roast for 20 minutes, then reduce the temperature to 325°F (163°C) and continue cooking for about 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part reads 130°F (54°C) for medium-rare. Remove from the oven and let it rest for 20 minutes.

    Prepare the Au Jus

    In a saucepan over medium heat, melt the butter and add the remaining minced garlic. Sauté until fragrant, then add the beef broth and fresh thyme. Bring to a simmer and cook for 10 minutes. Adjust seasoning with salt and pepper to taste.

    Slice and Assemble

    Thinly slice the rested prime rib. Toast the garlic hoagie buns in the oven or on a skillet until golden brown. Place a generous amount of sliced prime rib inside each bun and serve with a small bowl of au jus on the side for dipping.
