Prepare the Filling
In a large bowl, combine ground pork, green onions, minced garlic, grated ginger, soy sauce, and sesame oil. Mix well until fully combined.

Assemble the Potstickers
Take a potsticker wrapper and place about 1 tablespoon of the pork mixture in the center. Moisten the edges of the wrapper with water, fold over to create a half-moon shape, and press to seal. Repeat with the remaining wrappers and filling.

Cook the Potstickers
In a large skillet, add a little oil over medium heat. Place the potstickers in the skillet, cooking until the bottoms are golden brown (about 3-4 minutes). Carefully add the water to the skillet, cover, and steam for another 5-6 minutes or until the water has evaporated.

Prepare the Cholula Mayo
In a small bowl, mix together mayonnaise and Cholula hot sauce until well combined.

Serve
Serve the potstickers hot, garnished with chopped cilantro and green onions, alongside the cholula mayo for dipping.
