Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

Soak the Onions
In a bowl, pour the buttermilk over the onion rings, ensuring they are well coated. Let them soak for at least 30 minutes.

Make the Breading
In a separate bowl, combine the flour, cornstarch, cajun seasoning, baking powder, salt, and black pepper. Mix well.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Onion Rings
Remove the onion rings from the buttermilk, allowing the excess to drip off. Dredge them in the flour mixture, coating them well. Shake off any excess flour.
