Pinto Bean Sauce Directions

1. Prepare the Pinto Beans

Rinse the pinto beans under cold water and soak them overnight in a large bowl with enough water to cover them by a couple of inches.

2. Cook the Beans

Drain and rinse the soaked beans. In a large pot, combine the beans and 4 cups of fresh water. Bring to a boil, then reduce heat to a simmer and cook for about 1 to 1.5 hours, or until the beans are tender. Drain any excess water.

3. Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 2 minutes.

4. Combine Ingredients

Add the cooked pinto beans to the skillet with the sautéed onions and garlic. Stir in the cumin, smoked paprika, salt, and black pepper. Mix well and cook for another 5 minutes on low heat.

5. Blend the Sauce
