Prepare the Beans
Rinse the red beans thoroughly under cold water. Soak them in 2 cups of water for at least 4 hours or overnight. Drain the beans before cooking.
Cook the Beans
In a pot, add the soaked beans and 2 cups of fresh water. Add the bay leaf, and bring to a boil. Reduce heat, cover, and simmer for about 1 hour, or until the beans are tender.
Combine Ingredients
Add the cooked beans (with their cooking liquid) to the pan with the sautéed onion and garlic. Stir in the salt, black pepper, paprika, cayenne pepper, tomato paste, and lemon juice. Mix well.
Simmer the Sauce
Allow the mixture to simmer for about 15-20 minutes, stirring occasionally. If the sauce is too thick, add a little water to reach the desired consistency.
Serve
Remove the bay leaf before serving. The sauce can be served warm as a dip or a side for various dishes.
