    If using dried red kidney beans, soak them overnight in water. Drain and rinse before cooking. If using canned beans, rinse and set aside.

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Sauté until the vegetables are soft and translucent, about 5 minutes.
