Sear the Pork Chops

Heat olive oil in a skillet over medium-high heat. Season the pork chops with salt, black pepper, and fresh thyme. Sear each chop for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.

Mora Sauce Preparation

Make the Mora Sauce

In a saucepan, combine mora berries, sugar, lemon juice, and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Mix cornstarch with a small amount of water to create a slurry, then add to the sauce. Stir until thickened, then add a pinch of salt to taste.

Prepare the Fondant Potatoes

Peel the russet potatoes and cut them into cylindrical shapes. In a separate skillet, melt butter over medium heat. Add the potatoes and cook until golden brown on each side. Add chicken stock, garlic cloves, and rosemary. Cover the skillet and simmer for about 15-20 minutes until the potatoes are tender.
