1. Prepare the Yuca
Peel the yuca and cut it into stick shapes, about 1/2 inch wide and 3-4 inches long. Rinse them under cold water and pat dry.
2. Fry the Yuca Sticks
In a deep pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the yuca sticks in batches, frying until golden brown (about 5-7 minutes). Remove and drain on paper towels. Sprinkle with salt.
3. Make the Cilantro Aioli
In a blender, combine mayonnaise, fresh cilantro, garlic cloves, lemon juice, salt, and pepper. Blend until smooth and creamy.
4. Serve
Serve the crispy yuca sticks hot with a side of cilantro aioli for dipping.
