Preparation

1. Prepare the Shrimp

In a bowl, combine the fresh shrimp with lime juice, salt, and black pepper. Mix well and let it marinate in the refrigerator for about 15-20 minutes until the shrimp turns opaque.

2. Make the Leche de Tigre

In a blender, combine the diced pineapple, habanero, cilantro, and a pinch of salt. Blend until smooth. Strain the mixture through a fine sieve to separate the liquid (leche de tigre) from the pulp.

3. Combine Ingredients

In a large mixing bowl, combine the marinated shrimp, diced tomatoes, thinly sliced red onion, and the strained leche de tigre. Toss gently to combine all the ingredients.

4. Garnish and Serve

Garnish with additional cilantro if desired and serve chilled.
