    Prepare the Plantain Chips

    Peel and slice the plantains into thin rounds. Heat olive oil in a frying pan over medium heat and fry the plantain slices until golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt to taste.

    Cook the Tenderloin

    Season the tenderloin with salt and black pepper. Heat a skillet over medium-high heat and add a little olive oil. Sear the tenderloin for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest.

    Make the Chocolate Sauce

    In the same skillet, lower the heat and add the dark chocolate, stirring until melted. Add a splash of water if necessary to achieve a sauce-like consistency. Stir in additional black pepper to taste.

    Plate the Dish

    Slice the rested tenderloin and plate it. Drizzle the dark chocolate sauce over the meat and sprinkle with crumbled De Mano cheese. Serve with the crispy plantain chips on the side.
