Preheat the Oven
Preheat your oven to 350°F (175°C).
Prepare the Casserole Mixture
In a large mixing bowl, combine the frozen hashbrowns, cream of chicken soup, sour cream, diced onion, salt, and black pepper. Mix until well combined.
Add Cheese and Bacon
Fold in 1 cup of shredded Colby cheese and the cooked bacon pieces into the hashbrown mixture.
Transfer to Baking Dish
Lightly grease a 9x13 inch baking dish with olive oil. Pour the hashbrown mixture into the prepared dish and spread it evenly.
Bake the Casserole
Bake in the preheated oven for 45 minutes, or until the edges are golden brown and the casserole is heated through.
Add Remaining Cheese
Remove the casserole from the oven and sprinkle the remaining 1 cup of shredded Colby cheese on top. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Serve
Remove from oven, let cool for a few minutes, then cut into squares and serve warm.
