Prepare the Catfish

Soak catfish fillets in buttermilk for at least 30 minutes. This helps to tenderize the fish and adds flavor.

Coat the Catfish

In a shallow dish, mix cornmeal, flour, Cajun seasoning, salt, and pepper. Remove fillets from buttermilk, allowing excess to drip off, then coat in the cornmeal mixture.

Fry the Catfish

Heat oil in a deep skillet over medium-high heat. Fry catfish fillets for about 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Make the Hushpuppies

In a bowl, combine cornmeal, flour, baking powder, sugar, and salt. In another bowl, mix onion, egg, and milk. Combine wet and dry ingredients and mix until just combined.

Fry the Hushpuppies

Heat oil in a separate skillet over medium heat. Drop spoonfuls of the hushpuppy batter into the hot oil and fry until golden brown, about 3-4 minutes. Drain on paper towels.
