Preheat the Oven

In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Sauté Onion

In a large mixing bowl, combine the frozen hashbrowns, cream of chicken soup, sour cream, sautéed onion, 1 cup of shredded cheddar cheese, salt, and black pepper. Stir until everything is well combined.

Mix Ingredients

Spread the mixture evenly in a greased 9x13 inch baking dish.

Transfer to Baking Dish

Sprinkle the remaining 1 cup of shredded cheddar cheese on top of the casserole.

Top with Cheese

Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and bubbly.

Allow the casserole to cool for a few minutes before serving.
