Marinate the Chicken
In a large bowl, combine the buttermilk, salt, and pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Breading
In a separate bowl, mix the flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Coat the Chicken
Remove the chicken from the buttermilk marinade and allow excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

Fry the Chicken
Carefully add the chicken pieces to the hot oil in batches, being sure not to overcrowd the pan. Fry for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Drain and Serve
Remove the fried chicken from the oil and place on a wire rack or paper towels to drain excess oil. Serve hot with your choice of sides.
