Tuna Tartare

Method

Preparation

  1. 1

    Prepare the Tuna Tartare

Dice the sushi-grade tuna into small cubes and place it in a bowl.

  2. 2

    Mix Ingredients

Add the soy sauce, sesame oil, lime juice, scallions, cilantro, and sea salt to the bowl with the tuna. Gently mix to combine.

  3. 3

    Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with a pinch of salt.

  4. 4

    Prepare the Pickled Moo

If using store-bought pickled daikon, slice it thinly. If making your own, prepare pickled daikon by soaking sliced daikon in rice vinegar, sugar, and salt for at least an hour.

  5. 5

    Make Gim Chips

Preheat the oven to 350°F (175°C). Brush nori sheets with olive oil and sprinkle with sesame seeds. Cut them into triangles and bake for 10 minutes or until crispy.

  6. 6

    Assemble the Dish

On a plate, spread a layer of mashed avocado, top with the tuna tartare, and garnish with pickled moo. Serve with crispy gim chips on the side.
