Prepare the Soft-Poached Eggs
Bring a pot of water to a gentle simmer. Add a splash of vinegar to the water. Crack each egg into a small bowl, then gently slide it into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

Cook the Wagyu Beef
In a large skillet or wok, heat the sesame oil over medium-high heat. Add the diced Wagyu beef and cook for about 3-4 minutes until browned. Season with salt and black pepper.

Add Rice and Soy Sauce
Add the cooked rice and soy sauce to the skillet. Stir well to combine all ingredients and cook for an additional 3-4 minutes, allowing the rice to soak up the flavors.

Finish with Green Onions
Stir in the chopped green onions and cook for an additional minute. Adjust seasoning with salt and pepper as needed.

Plate the kimchi Wagyu fried rice and top each serving with a soft-poached egg. Enjoy!
