    Prepare the Eggs

    Bring a pot of water to a gentle simmer. Carefully crack the eggs into small bowls, then slide them into the water one at a time. Poach for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

    Cook the Wagyu Beef

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced Wagyu beef and cook for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.

    Fry the Rice

    In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped Kkadooki kimchi and stir-fry for 2 minutes. Then add the cooked rice and soy sauce, mixing well to combine.

    Combine Ingredients

    Return the cooked Wagyu beef to the skillet, add sesame oil, and season with salt and pepper to taste. Cook everything together for another 2-3 minutes until heated through.

    Serve

    Divide the Wagyu fried rice among plates, top each with a soft-poached egg, and sprinkle with sliced green onions. Serve immediately.
