    Prepare the Broth

    In a large pot, combine the anchovy fillets and water. Bring to a boil, then reduce heat and simmer for 15 minutes to create a savory broth.

    Add Vegetables

    Chop the zucchini and potatoes into bite-sized pieces. Add them to the pot and cook for an additional 10 minutes, or until the potatoes are tender.

    Prepare the Tofu

    While the vegetables are cooking, drain and cube the firm tofu. After the vegetables are tender, gently add the tofu to the pot.

    Flavor the Stew

    Stir in the soy sauce, fermented soybean paste, minced garlic, and grated ginger. Let it simmer for another 5 minutes.

    Finish with Seasoning

    Drizzle sesame oil over the stew and season with black pepper to taste. Garnish with chopped green onions before serving.
