    Prepare the Beef Shank

    In a large pot, add the beef shank, garlic, green onion, and enough water to cover the beef. Bring to a boil, then reduce to a simmer. Cook for about 2-3 hours until the beef is tender. Remove the beef, shred it, and set aside. Strain the broth and return it to the pot.

    Make the Consommé

    Add the beef stock to the pot with the strained broth. Season with soy sauce, sesame oil, salt, and pepper to taste. Let it cool and then refrigerate until chilled.

    Cook the Noodles

    In a pot of boiling water, cook the buckwheat noodles according to package instructions until al dente. Drain and rinse under cold water to cool them down.

    Prepare the Toppings

    Thinly slice the pickled daikon and Asian pear. Set aside.

    Assemble the Naengmyun

    In a bowl, place a portion of the cold noodles. Pour the chilled consommé over the noodles. Top with shredded beef shank, pickled daikon, and sliced pear. Garnish with additional green onion if desired.
