Prepare the Veal
Season the veal cutlets with salt and black pepper.

Set Up Breading Station
In three separate bowls, place the flour, beaten eggs, and a mixture of breadcrumbs and grated Parmesan cheese.

Bread the Veal
Dredge each veal cutlet in the flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.

Cook the Veal
In a large skillet, heat the olive oil over medium heat. Cook the breaded veal cutlets for about 3-4 minutes on each side, or until golden brown and cooked through.

Add Sauce and Cheese
Once cooked, place the veal cutlets in a baking dish. Pour the cossetta sauce over the cutlets and sprinkle with shredded mozzarella cheese.

Bake
Preheat the oven to 375°F (190°C) and bake for about 15-20 minutes or until the cheese is melted and bubbly.

Remove from the oven and let cool slightly before serving. Enjoy your Veal Parmigiana!
