Gelato Preparation

    Make the Custard Base

    In a saucepan over medium heat, combine the whole milk, heavy cream, and half of the sugar. Stir until the sugar dissolves and the mixture is hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks with the remaining sugar until pale and thick.

    Temper the Eggs

    Slowly pour the hot milk mixture into the egg yolks, whisking constantly to prevent curdling.

    Cook the Custard

    Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens and coats the back of a spoon.

    Cool the Mixture

    Remove from heat, stir in the vanilla extract, then let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato into an airtight container and freeze for at least 2 hours before serving.
