Cook the Bacon
In a large skillet over medium heat, add the bacon strips and cook until crispy, about 6-8 minutes. Remove the bacon from the skillet and place on a paper towel to drain excess grease. Once cooled, crumble the bacon into small pieces.

Cook Hashbrowns
In the same skillet, add olive oil and heat over medium-high heat. Once hot, add the frozen hashbrowns. Season with salt and black pepper. Cook for about 5-7 minutes or until the bottom is crispy and golden brown. Flip the hashbrowns and cook for another 5-7 minutes until the other side is also crispy.

Add Spinach
Once the hashbrowns are crispy, add the fresh spinach to the skillet. Stir gently for about 2-3 minutes until the spinach is wilted.

Add Cheeses and Bacon
Sprinkle the cheddar cheese and crumbled feta cheese over the cooked hashbrowns and spinach. Add the crumbled bacon on top. Cover the skillet with a lid and let it sit for about 2-3 minutes until the cheese is melted.

Serve the Dish
Once the cheese has melted, remove the skillet from the heat. Serve the Mediterranean hashbrowns hot, garnished with additional black pepper if desired.
