Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted unsalted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then remove and let cool.

Melt the chocolate

In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring in between until smooth. Let it cool slightly.

Make the cheesecake batter

In a large bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add in the sour cream, heavy cream, vanilla extract, and melted white chocolate. Mix until well combined. Add the eggs one at a time, mixing just until incorporated after each addition.
