Truffle Fries Directions

    Prepare the Potatoes

    Wash the Russet potatoes and cut them into thin strips to make fries. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Fry the Rosemary

    In a small saucepan, heat a small amount of vegetable oil over medium heat. Add the fresh rosemary and fry until crispy. Remove and drain on paper towels.

    Fry the Potatoes

    In a large pot, heat the vegetable oil to 350°F (175°C). Drain the potato strips and pat them dry with a towel. Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt immediately.

    Combine and Serve

    Toss the hot fries with grated Parmesan cheese and fried rosemary. Serve immediately with black truffle aioli on the side for dipping.
