    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water and dry them. Poke several holes in each potato with a fork.

    Bake the Potatoes

    Rub the potatoes with olive oil and sprinkle with salt and pepper. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender when pierced with a fork.

    Scoop Out the Flesh

    Remove the potatoes from the oven and let them cool slightly. Once cool enough to handle, cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato on the skin.

    Crisp the Skins

    Increase the oven temperature to 450°F (230°C). Brush the insides of the potato skins with olive oil and sprinkle with salt and pepper. Place them skin-side down on a baking sheet and return to the oven for about 10-15 minutes, until crispy.

    Add Toppings

    Remove the crispy skins from the oven and fill each with crumbled bacon and shredded cheddar cheese. Return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.

    Serve

    Remove from the oven and let cool slightly. Top with sour cream and chopped green onions before serving.
