Prep the Potatoes
Wash the Russet potatoes thoroughly and peel them if desired. Cut each potato into thin strips, about 1/4 inch thick.

Soak the Fries
Soak the cut potato strips in cold water for at least 30 minutes. This helps remove excess starch and makes them crispier.

Dry the Fries
After soaking, drain the water and spread the fries on a clean kitchen towel. Pat them dry to remove excess moisture.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

Fry the Potatoes
Carefully add a batch of fries to the hot oil. Fry them for about 5-7 minutes or until golden brown and crispy. Do not overcrowd the pot.

Drain and Season
Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and pepper to taste.
