Add the Acid
Once the milk is heated, remove it from the heat and add the white vinegar or lemon juice. Stir gently for a few seconds, then let it sit undisturbed for about 5-10 minutes to allow the curds to form.

Strain the Curds
Line a colander with cheesecloth or a fine mesh sieve. Pour the curds and whey into the colander to separate them. Let it drain for about 10-15 minutes.

Rinse the curds under cold water to remove any residual whey and to cool them down. Sprinkle with salt to taste and mix gently.
