    Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, indicating they are done. Drain and set aside.

    Cook the Pancetta or Guanciale

    In a large skillet, cook the pancetta or guanciale over medium heat until crispy, about 5-7 minutes. Remove from heat and set aside, leaving the rendered fat in the pan.

    Prepare the Sauce

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

    Combine Ingredients

    Add the cooked gnocchi to the skillet with the pancetta. Toss to coat in the rendered fat. Remove from heat and quickly pour the egg and cheese mixture over the gnocchi, tossing continuously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to loosen it.
