Cooking Instructions
- 1
Prepare the Chicken
Season the chicken breasts with salt and pepper on both sides.
- 2
Sear the Chicken
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- 3
Cook the Mushrooms
In the same skillet, add the remaining tablespoon of butter. Add the sliced mushrooms and sauté for about 5 minutes until they are browned. Stir in the minced garlic and cook for an additional minute.
- 4
Deglaze the Pan
Pour in the Madeira wine and scrape up any brown bits from the bottom of the skillet. Allow the wine to reduce by half, about 2-3 minutes.
- 5
Make the Sauce
Add the chicken broth and let it simmer for another 5 minutes. Stir in the heavy cream and let the sauce simmer until slightly thickened, about 3-5 minutes.
