Make the Pappardelle
In a large mixing bowl, combine flour and a pinch of salt. Make a well in the center, add eggs, and gradually mix to form a dough. Knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Brown the Meat
Add ground beef, veal, and pork to the vegetable mixture. Cook until browned, breaking up the meat with a spoon, about 10 minutes.

Simmer the Sauce
Pour in the red wine and let it simmer for 3-5 minutes until reduced. Add crushed tomatoes, salt, and black pepper. Reduce heat to low and let it simmer for at least 45 minutes, stirring occasionally.

Roll Out the Pappardelle
After resting, roll out the dough on a floured surface to about 1/8-inch thickness. Cut into wide strips (about 1-inch) to make pappardelle.

Cook the Pappardelle
Bring a large pot of salted water to a boil. Cook the pappardelle for 2-3 minutes or until al dente. Drain and toss with the Bolognese sauce.

Serve
Plate the pappardelle Bolognese, dollop with fresh ricotta, and sprinkle with chopped basil before serving.
