Make the Ravioli Dough

In a large bowl, mix flour and salt. Create a well in the center and add eggs and olive oil. Gradually combine until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Prepare the Cheese Filling

In a bowl, combine ricotta, Parmesan, egg yolk, basil, salt, and pepper. Mix until well combined.

Roll Out the Dough

Divide the dough into 4 pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin, dusting with flour to prevent sticking.

Form the Ravioli

Place teaspoons of filling on one sheet of dough, spacing them evenly. Brush around the filling with water, place another sheet of dough on top, and press down to seal. Cut into squares.

Cook the Ravioli

Bring a large pot of salted water to a boil. Add ravioli and cook for 3-5 minutes until they float. Remove with a slotted spoon.

Prepare the Sauce

For marinara, heat olive oil in a saucepan, add garlic, and sauté until fragrant. Add crushed tomatoes, salt, and sugar. Simmer for 20 minutes. For vodka sauce, add vodka and simmer for 5 minutes, then stir in heavy cream.

Serve

Plate the ravioli and top with your choice of marinara or vodka sauce. Garnish with extra Parmesan and basil if desired.
