1. Prepare the Potatoes

Preheat your oven to 400°F (200°C). Wash and chop the potatoes into quarters. Toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 30-35 minutes until golden and crispy.

2. Sear the Pork Chops

Season the pork chops with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear them for about 4-5 minutes on each side until they're golden brown. Remove from the skillet and set aside.

3. Prepare the Port Wine Reduction

In the same skillet, add minced garlic and cook for about 30 seconds. Pour in the port wine and bring it to a simmer, scraping the bottom of the skillet to deglaze. Let it reduce by half.

4. Assemble the Dish

Return the pork chops to the skillet and place a slice of prosciutto and provolone on each chop. Cover the skillet and let them cook for an additional 3-4 minutes until the cheese is melted and the pork is cooked through.

5. Roast the Almonds

While the pork chops are cooking, spread the almonds on a separate baking sheet and roast in the oven for about 10 minutes until they are golden and fragrant.

6. Serve

Serve the pork chops on a plate, drizzled with the port wine reduction, alongside the roasted potatoes and topped with roasted almonds and freshly chopped parsley.
