Prepare the Pork Belly
In a bowl, combine soy sauce, brown sugar, minced garlic, and minced ginger to create a marinade. Add the pork belly to the bowl, ensuring it's fully coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Cook the Pork Belly
Preheat your oven to 150°C (300°F). Place the marinated pork belly on a baking tray and roast for about 2 to 2.5 hours, or until the pork is tender and the skin is crispy. Let it rest for 10 minutes before slicing.

Assemble the Wraps
Slice the cooked pork belly into thin strips. To assemble, take a lettuce leaf, add a few strips of pork belly, and top with julienned carrots, cucumber, and chopped green onions. Drizzle with a little sesame oil.
