    Marinate the Chicken

    In a bowl, combine the chicken thighs with the Al Pastor marinade and diced pineapple. Mix well and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken for about 6-7 minutes on each side or until fully cooked and slightly charred. Remove from heat and let it rest for a few minutes.

    Assemble the Tacos

    Once the chicken has rested, chop it into bite-sized pieces. Warm the corn tortillas on the grill or in a skillet. To assemble each taco, place a portion of the chopped chicken on a tortilla, and top with diced onion and chopped cilantro.

    Serve

    Serve the tacos with lime wedges on the side for squeezing over the top. Enjoy with a side of rice.
