    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Once the oil is hot, add the beef and sear on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Add Remaining Ingredients

    Add the beef broth, diced tomatoes, cumin, chili powder, and the seared beef back into the pot. Bring the mixture to a boil.

    Braise the Beef

    Reduce the heat to low, cover the pot, and let it simmer for 2-3 hours, or until the beef is tender and easily shredded with a fork.

    Shred the Beef

    Remove the beef from the pot and shred it with two forks. Return the shredded beef to the pot and stir to combine with the sauce.

    Warm the Tortillas

    In a skillet, warm the corn tortillas over medium heat until pliable, about 30 seconds on each side.

    Assemble the Tacos

    To serve, place a generous amount of the shredded beef mixture on each tortilla, top with chopped cilantro, and serve with lime wedges on the side.
